Jill's Community Muffin Recipe

Sampled at the Fun Run & easy to make for a crowd!

  • 1 14 oz box of raisin bran cereal (organic varieties usually skip hydrogenated oils)
  • 5 C flour
  • 3 C sugar
  • 5 tsp baking soda
  • 2 tsp salt
  • 4 C buttermilk
  • 1 C canola oil
  • 4 eggs, beaten
  • 2 C dried sweetened cranberries
  1. Combine cereal, flour, sugar, baking soda and salt in a large bowl. Mix well. Whisk together buttermilk, oil and eggs in a smaller separate bowl. Add egg mixture to cereal mixture; stir until blended. Fold in cranberries.
  2. Place batter in a tightly covered container in refrigerator overnight. The batter will keep for up to four weeks and improve over time! Do not stir during refrigeration or when ready to bake.
  3. Preheat oven to 400 deg. Spoon batter into muffin tin lined with paper baking cups. Bake 18 minutes, or until a toothpick inserted into the center comes out clean. Cool in muffin tins at least 10 minutes. Makes 4 dozen muffins. Share warm with a crowd!
